Chocolate Cup Cake FIX! ~ Vegan Style

Who doesn't love Chocolate & Cup Cakes!?
This past WEEK I was craving a rich chocolate something or other.  The boys in the house are always up for something sweet and what better way to FIX the problem then with CUP CAKES!
This recipe was modified from the oh so awesome cook book "Cup Cakes take over the Wold".

Ok get ready to get your Chocolate Fix on!?!

1st Large Bowl
1 cup Almond Breeze Milk
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 1/2 teaspoon vanilla extract
1/2 teaspoon almond extract

2nd Bowl
1 cup all-purpose flour (unbleached
1/3 cup cocoa powder (I use Ah'laska Bakers Coco - unsweetened non dairy low fat)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt


On the Side
-Cooking Spray (check ing, NO butter - we use canola oil spray)
-Pillsburry Creamy Supreme Chocolate Fudge 
(check the labels of ingredients & make sure there are NO animal products, most frosting are 
accidentally "Vegan")


Directions:
-Preheat your oven to 350
-Line a 12 section muffin pan with cup cakes paper liners

1 Bowl
-Whisk together Almond milk & Apple Cider Vinegar (put it aside for a bit for it to curdle)  
-Once it looks curdled add your granulated sugar, canola oil, vanilla extract & Almond extract to the
Almond milk & Vinegar.
-Mix with a whisk until foamy (or) use an electrical mixer & beat until foamy as well. (either one works)


2nd Bowl
-Shift together your all purpose flour, cocoa powder, baking soda, baking powder and sea salt.
-Add 2nd Bowl ing to your 1st Bowl and beatmix until no large lumps remain.  Add the 2nd bowl ing in 
slow and you will have an easier time with lumps.


-LIGHTLY spray the cup cake paper liners with your cooking spray.
-After your liners are sprayed fill each cup about 3/4 of the way.
-Place in oven and bake for about 18 minutes.
-When the time is up check the cup cakes with a tooth pick. Insert tooth pick into the center of the cup cakes if the tooth pick comes out clean then your cup cakes are done.


-Take the cup cakes out of the oven and place them somewhere they can cool COMPLETELY.


Assembling your Cup Cakes:
-After cup cakes are completely cool take them out of the muffin tray one by one and start adding your frosting with a butter knife or spoon to the tops.

-When you get the frosting set to your liking if your feeling fancy you can sprinkle on the tops vegan chocolate chips, chocolate sprinkles or shave some dark chocolate over top.
