raw vegan goat cheese

i am beyond pumped as to how this came out. what great flavor.
check it out...

-1/2 cup raw cashews - soaked for 3-4 hours & drained.
-1/3 cup water
-1 tablespoon coconut oil
-1 teaspoon raw apple cider vinegar
-pinch of grey sea salt
-juice of 1/2 a lemon

how to:
-get a small glass bowl ready and line with plastic wrap

-in a blender - on high speed - mix all of the ingredients until smooth. should not feel gritty. about 6 minutes and no less. 

-place mixture in your glass bowl refrigerate for several hours, or what we did was put in the fridge for a few hours, then placed it in the freezer to help it set better. 

-serve when ready to eat C:
