grilled caramelized onion & hummus sandwich

this sandwich would also be wonderful with just about anything added to it... such as tomatoes, spinach, mushrooms, vegan cheese... basically anything your vegan taste buds desire :)

we prefer this "as it" with a side cup of smoky black eyed pea & kale stew.
 
ingredients: (makes about 2 sandwiches)
~1 small white onion
~hummus (we used roasted red pepper hummus - pre made or you can make your own - recipe coming soon)
~2 tablespoons organic coconut oil
~2 slices of rye bread or whole grain bread (we used rye - above)
~garam masala (shown at the end of this blog post)
 
directions:
1. add the coconut oil to a skillet/frying pan - on medium heat
 
2. slice your onion in thin, round slices - add to skillet. cook onions for a few minutes - turn down heat to low-medium - continue cooking and stirring occasionally until onions are browned and a little crispy. (my husband like his onions a bit soft rather than crispy - either way it's delicious.- just don't burn them) - this should take about 25 minutes or so.
 
3. take your bread and spread hummus on both sides, sprinkle garam masala on top of hummus (both sides as well, add your onions, close sandwich and grill on both sides until golden brown and crispy.

Note:
before we add onions to the sandwich we transfer them to a bowl and place the skillet back on the burner. we did not clean the skillet. the juice from the onions and the coconut oils is a nice additive to grilling the rest of the sandwich.
