Snack for my Artichoke Lovers

I don't know about you, but I can eat Artichokes right out of the jar - any time of day! The recipe below has a very unique taste and it definitely will make you come back for more. You can get about 32 pieces out of the ingredients listed and it takes about 25 minutes from start to finish. Ready? !

Ingredients you will need:

-16 slices cocktail rye bread - cut crust off and in half diagonally. (We get our bread from the Bakery Department of our super market)
-1 package (12oz) Italian Classics Frozen Artichoke Hearts - thaw and pat dry. (any large pieces you will want to trim or cut in half if needed)
-1 cup vegenaise (Mayonnaise)
-1 block of Daiya Chedder Style Wedge - cut up into small pieces, place in non stick pan and simmer on low until fully melted.
-Zest of Lemon
-Cracked Black Pepper

You will also need:

-Baking sheet
-Non stick foil
-Zip closure plastic bag
-To Preheat oven to 450 degrees.

Directions:

1. Arrange bread in single layer on foil- lined baking sheet and top each bread triangle with artichoke piece.
2. In a bowl mix Vegenaise, Cheese, lemon zest and cracked black pepper.
** After mixed add the mixture to your zip closure plastic bag, twist tight to squeeze out air and cut snip off corner of bag. Pipe out about 1 tablespoon over each artichoke.

3. Bake 7-8 minutes, until golden brown, make sure you watch them carefully.

Take out of oven, sort on your favorite dish and serve semi warm or cold.
